Choose a private space with a door that closes — a villa living room or a small function room — not a corner of a large hall. Set the altar properly with the lacquered board, incense burner and five-fruit tray; order the ceremonial trays locally in advance and bring only heirloom pieces with you.
We just did ours at Furama Villas: the ancestral rite in the villa living room in the morning, the full incense offering and formal address, and my grandparents were delighted. The bride's procession walked through the gardens to the aisle, so the traditional feeling was completely intact.
